Frijoles Borrachos

Frijoles Borrachos by Cindy McNamara

...or Drunken Beans. Why just simmer plain ol' pinto beans when you can add a few ingredients and have MUY Delish Drunken Beans?? I prefer a dark beer for this recipe but any you have on hand should be fine. I used some heirloom Good Mother Stallard beans from Rancho Gordo growers here in Cali. They are available online along with a…

Braised Lamb w Flageolets & Winter Vegetables

Braised Lamb w Flageolets & Winter Vegetables by Cindy McNamara

Boneless leg of lamb butterflied and packed with a garlic herb paste then braised. Winter root vegetables and heirloom beans added towards the end of a 3-4 hour braise. Comfort food with a Provencal flavor. I'm serving it up tonight with lightly dressed green salad, crusty bread and red wine.

Roasted Tomatillo Salsa

Roasted Tomatillo Salsa by Cindy McNamara

I picked up a bunch of nice looking tomatillos at the local farmers market this week that were crying to be charred on the grill and made into a spicy salsa for me to can. It could be eaten fresh and would last a couple of weeks in the fridge. If you don't want so much heat, simply reduce the jalapeno quantity.

Marshmallows

Marshmallows by Cindy McNamara

I'm putting together a box of home made goodies for shipping to my soldiers and decided to try my hand at making marshmallows. They seem so intimidating but the instructions were pretty simple. McNamara's Brown Irish Soda Bread

McNamara's Brown Irish Soda Bread by Cindy McNamara

This is a healthy brown version with no fruit or caraway seeds added. I have taken the liberty to include ground flaxseed and substitute honey or agave nectar for the sugar. I think this is my favorite version of this traditional St. Patrick's Day staple.

This is a white, fruited version of Irish soda bread. Its fast to assemble and cooks slow at a lower oven temp of 325F.

Fish Tacos with Diablo Sauce

Fish Tacos with Diablo Sauce by Cindy McNamara

I prefer my fish tacos with sauteed not deep fried fish. The key for this recipe is the sauce, which can be as hot or mild as you prefer. I'd rate this particular version as a 5 out of 10 on the heat scale. Sometimes I like to add a bit of chopped mango and jicama to my Pico to use as a salsa for fish or chicken dishes.

McNamara Clans Favorite Chili

McNamara Clans Favorite Chili by Cindy McNamara

Just whipped up a batch of this rich, beefy chili for Super Bowl Sunday. We love to top it with sour cream, avocado, cilantro, shredded cheese, green onion and fried corn tortilla strips. I like a squeeze of lime on mine too. Its always better the second day and makes excellent filling for baked potatoes, burritos or for nachos.
