Yoghurt Love and Labneh Recipe

- Large pinch of salt
- About 5 mild green Turkish pepper for stuffing (you could also use the long red Romero peppers if you can’t find the Turkish ones)

%20and%20leave%20it%20on%20the%20shelf%20for%20three%20days.%E2%80%99%20That%E2%80%99s%20one%20approach,%20although%20it%20is%20of%20course%20really%20just%20curdled%20milk%20and%20not%20%E2%80%98proper%E2%80%99%20yoghurt.%20The%20taste%20was%20very%20sour%20and%20it%20had%20a%20loose%20wobbly%20texture.%20The%20Ethiopians%20often%20mix%20it%20with%20chilli%20powder%20and%20drink%20the%20whole%20glass%20like%20a%20shot,%20and%20I%20can%20see%20why.%20I%20spent%20the%20next%20three%20hours%20concerned%20about%20potential%20gastrointestinal%20payback.%3C/p%3E%3Cp%3EYoghurt%20in%20Ethiopia%3C/p%3E%3Cp%3EMixed%20with%20chilli%20powder%3C/p%3E%3Cp%3ELabneh,%20then,%20is%20basically%20yoghurt%20that%E2%80%99s%20been%20strained%20of%20its%20whey.%20Of%20course%20I%20adore%20it%20because,%20well%20it%E2%80%99s%20like%20yoghurt%20to%20the%20power%20of%20ten.%20Once%20strained,%20the%20resulting%20substance%20is%20more%20akin%20to%20cream%20cheese,%20but%20with%20the%20obvious%20tartness%20of%20yoghurt;%20that%20sour%20freshness%20that%20yoghurt-lovers%20crave.%3C/p%3E%3Cp%3EI%E2%80%99ve%20found%20that%20the%20best%20brand%20by%20far%20for%20making%20yoghurt%20is%20Total.%20It%E2%80%99s%20even%20better%20than%20the%20mega%20expensive%20stuff%20I%20bought%20from%20the%20farmers%E2%80%99%20market,%20which%20relinquished%20hardly%20any%20liquid.%20It%20is%20thick%20and%20creamy%20before%20straining%20%20which%20is%20a%20good%20thing%20if%20you%E2%80%99re%20eating%20it%20straight%20up,%20but%20with%20labneh%20you%20want%20some%20residual%20sourness.%3C/p%3E%3Cp%3ETo%20make%20labneh,%20mix%20the%20yoghurt%20with%20a%20large%20pinch%20of%20salt,%20then%20wrap%20in%20muslin,%20or%20as%20I%20have%20done,%20a%20clean/brand%20new%20dishcloth.%20Hang%20in%20the%20fridge%20(to%20be%20honest%20I%20used%20to%20just%20hang%20it%20in%20a%20cool%20place%20but%20now%20I%20have%20a%20very%20hot%20kitchen%20so%20the%20fridge%20it%20is)%20and%20allow%20the%20whey%20to%20strain%20away%20for%20about%205%20to%206%20hours.%20The%20longer%20the%20strain,%20the%20thicker%20the%20labneh,%20obviously.%3C/p%3E%3Cp%3EAfter%20this%20time%20it%20is%20ready,%20and%20can%20be%20used%20or%20preserved%20in%20a%20number%20of%20ways.%3C/p%3E%3Cp%3ETry%20rolling%20in%20herbs%20and%20preserving%20in%20olive%20oil%E2%80%A6it%E2%80%99s%20then%20lovely%20just%20spread%20on%20bread.%20It%E2%80%99s%20also%20delicious%20rolled%20in%20dukkah,%20or%20za%E2%80%99atar.%20Straight%20up%20it%E2%80%99s%20best%20topped%20with%20punchy%20flavours%20like%20anchovy%20and%20chilli,%20or%20dolloped%20onto%20salads%20as%20you%20would%20use%20a%20goat%E2%80%99s%20curd%20for%20example.%3C/p%3E%3Cp%3EMy%20favourite%20way%20to%20use%20it%20right%20now%20however%20is%20to%20stuff%20it%20into%20Turkish%20peppers%20before%20slinging%20them%20on%20the%20BBQ.%20They%20are%20lovely%20when%20wrapped%20up%20inside%20a%20flat%20bread%20with%20a%20kebab,%20oozing%20their%20creamy%20centres%20against%20the%20sizzling%20meat.%20If%20you%E2%80%99re%20up%20for%20it,%20you%20fly%20bastards,%20stuff%20some%20green%20chillies%20instead.%3C/p%3E%3Cp%3EMuslin%20or%20a%20dishcloth%20for%20straining%3C/p%3E%3Cp%3EIn%20a%20bowl%20mix%20the%20yoghurt%20with%20the%20salt.%20Line%20a%20bowl%20with%20the%20muslin%20or%20cloth%20and%20scrape%20the%20yoghurt%20into%20it.%20Tie%20the%20top%20with%20string%20or%20whatever%20you%20have%20and%20suspend%20it%20from%20something.%20I%20used%20to%20use%20a%20cupboard%20handle%20but%20now%20I%20have%20a%20very%20sun%20filled,%20hot%20kitchen%20and%20so%20I%20hung%20it%20in%20the%20fridge.%20Set%20a%20bowl%20underneath%20to%20catch%20the%20whey.%20Leave%20for%205%20or%20so%20hours.%20It%20will%20be%20usable%20but%20soft%20after%203.%20If%20you%20want%20to%20make%20balls%20with%20it%20and%20preserve%20them%20in%20oil%20then%20the%20longer%20the%20better%20as%20the%20labneh%20will%20need%20to%20be%20fairly%20firm%20for%20rolling.%3C/p%3E%3Cp%3ECut%20the%20tops%20off%20the%20peppers%20and%20de-seed%20them%20without%20cutting%20the%20sides.%20Stuff%20with%20labneh.%20Rub%20with%20oil,%20salt%20and%20pepper%20and%20either%20grill%20on%20a%20BBQ%20or%20underneath%20a%20hot%20grill%20until%20charred%20in%20places%20and%20soft.%20Serve%20either%20in%20kebabs,%20or%20on%20toast,%20in%20pittas%E2%80%A6%3C/p%3E){kind=link}
