Indian Spiced Tofu Skewers, Coriander, Yoghurt And Grilled Recipe

Ingredients

  • 3 pkt Tofu Juice 2 lemons Salt and pepper
  • 1 x Red onion
  • 2 Tbsp. Minced coriander
  • 1 sm Cucumber, peeled
  • 4 x Pitta breads
  • 1 tub natural lowfat yoghurt Groundnut oil for frying
  • 1 Tbsp. Coriander seeds
  • 1 Tbsp. Cumin seeds
  • 1 Tbsp. Paprika
  • 2 x Red chillies
  • 1 sm Piec ginger
  • 3 Tbsp. Lowfat yoghurt
  • 2 Tbsp. Turmeric
  • 1 Tbsp. Garam masala

Directions

  1. Blitz all the spices together till finely grnd in a coffee grinder. Stir in 3 Tbsp. of lowfat yoghurt.
  2. Cut the tofu into squares 2"x2", coat with lemon juice and sprinkle with salt. Marinate in the spice mix for at least one hour. Skewer them on to bamboo skewers and set aside.
  3. Finely slice the red onion and cucumber and mix together with the coriander. Season with salt and pepper. Heat a grill pan and grill the pittas on both sides. Keep hot.
  4. Fry the tofu skewers in a little groundnut oil till brown on all sides.
  5. To serve, slice open the pittas, fill with some of the red onion mix, top with a tofu skewer and serve with natural lowfat yoghurt.
