  •     Vegetable oil for deep frying
  • 4 lb chicken wings rinsed, and
  •     patted dry with paper towels
  • 1/2 c. sriachi chili sauce
  • 1/4 c. Crystal Warm Sauce
  • 8 ounce butter melted
  • 1/2 x lemon juiced
  • 1 Tbsp. warm pepper sauce
  • 8 ounce blue cheese
  • 4 ounce cream cheese
  • 1/2 x lemon juiced
  • 8 x celery ribs cut on the bias
  •     into dipping-sized batons

Directions

  1. In a deep fryer or possibly large saucepan heat vegetable oil till a thermometer registers 35 degrees. Fry chicken wings in batches till golden and wings float in the oil, about 6 to 8 min. Drain well on paper towels.
  2. In a large bowl combine sriachi sauce, Crystal Warm Sauce, melted butter, lemon juice and warm pepper sauce. Whisk well to combine and pour over fried chicken wings. Allow to sit a few min before serving.
  3. For Blue Cheese And Celery Crudite: In the bowl of a food processor combine blue cheese, cream cheese and lemon juice. Process till smooth and well combined. Serve with celery batons and spicy chicken wings.
  4. This recipe yields 6 to 8 servings.
