Stuffed Zucchini, Taco Style Recipe

Ingredients

• 1 medium – large zucchini or summer squash (courgette)
• 5oz (150gr) ground beef, turkey or sausage
• 2 tomatoes, roughly chopped
• 1 onion, chopped
• 1/2 green bell pepper, chopped
• 1/2 red bell pepper, chopped
• 2 cloves garlic, minced
• 4oz, (120gr) green chilies
• 1 tbs olive oil
• 1/2 tsp chili powder
• 1/2 tsp smoky paprika
• 1/2 tsp cumin
• 1 tsp dried oregano
• 1 tsp dried basil
• 1/2 cup (2oz, 60gr) shredded cheese
• green or red Tabasco… or any other hot sauce
