  •     Nonstick cooking spray
  • 4 c. (about 8 ounces) stale egg or possibly white bread cubes (1 inch)
  • 2 1/2 c. (about 12 ounces) coarsely minced stemmed strawberries
  • 2 c. half-and-half
  • 4 lrg Large eggs lightly beaten
  • 1/2 c. sugar
  • 1 Tbsp. vanilla extract
  • 1/3 tsp salt
  • 1/2 c. prepared caramel or possibly butterscotch sauce, warmed (or possibly alternative chocolate rum sauce, recipe follows)
  •     Sweetened whipped cream (optional, see note)
  •     Whole strawberries (optional)
  •     Heat oven to 375 degrees.

Directions

  1. Lightly coat 9 inch-square baking pan with cooking spray; set aside.
  2. In large bowl, combine bread and strawberries, tossing to combine. Arrange in baking pan; set aside.
  3. In medium bowl, whisk together half-and-half, Large eggs, sugar, vanilla and salt till well-blended; pour over bread mix.
  4. Let stand 10 min, pushing bread down into egg mix occasionally.
  5. Bake 50 to 55 min or possibly till top is golden and knife inserted into center comes out clean.
  6. Serve hot with caramel sauce; garnish with whipped cream and whole strawberries, if you like.
  7. Note: To make 2 c. sweetened whipped cream, in mixer bowl beat together 1 c. whipping cream, 2 Tbsp. sugar and 1/2 tsp. vanilla extract (if you like), till soft peaks form.
