  • 1 x purchased fully-baked thin pizza crust (10 ounce)
  • 1 3/4 c. grated sharp cheddar cheese
  • 2 c. roast chicken strips
  • 1/2 tsp grnd cumin
  • 1/2 c. thinly-sliced red onion
  • 6 Tbsp. frzn corn kernels thawed, liquid removed
  • 6 Tbsp. minced fresh cilantro
  • 2 lrg jalapeno chilies cut thin rounds,
  •     and seeded
  • 2/3 c. purchased refrigerated fresh salsa liquid removed

Directions

  1. Position rack in center of oven and preheat to 425 degrees. Place crust on rimless baking sheet. Leaving 3/4-inch plain border, sprinkle 1 c. cheese, chicken strips and cumin over crust. Top with onion, 4 Tbsp. corn, 4 Tbsp. cilantro, 3/4 c. cheese, jalapenos and 2 Tbsp. corn.
  2. Bake pizza till crust is crisp and topping is heated through, about 13 min. Top with salsa and remaining 2 Tbsp. cilantro.
  3. This recipe yields 6 servings.
  4. Comments: Use leftover roast chicken for this, or possibly buy a cooked chicken at the market. For an extra-special treat, top each baked slice with a dollop of lowfat sour cream and sliced avocado.
