Ingredients

  • Shredded Chicken - can omit if vegetarian
  • Cut the tops of the bell peppers - and trim the insides out so there is no white
  • Place the hollowed bell peppers in the oven for 20 minutes on 350F or 175C
  • Once quinoa is boiled - most the water will be absorbed - drain and rinse the grain in hot water
  • Take the peppers out and fill them with the quinoa, then chicken, then mixed veg
