  • 15 medium to large tomatoes, washed and dried
  • 1 cup chopped fresh parsley, firmly packed, divided
  • 10 cloves of garlic, minced
  • 4 cups fresh bread crumbs
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup Parmesan cheese, divided
  • Olive oil
