Penne With Tuna, Capers And Parsley Recipe

Ingredients

  • 1 lb Penne or possibly ziti
  • 1 c. Fresh flat-leafed parsley leaves, washed, dry, and minced fine
  • 2 x Cloves garlic chopped to a fine paste
  • 1 sm Red onion, chopped
  • 1 c. Nicoise or possibly calamata olives, liquid removed and pitted
  • 1/4 c. Liquid removed capers, minced
  •     Salt and pepper to taste
  •     Fresh lemon juice
  •     Extra-virgin extra virgin olive oil
  • 2 can Tuna, liquid removed (6-oz)

Directions

  1. Bring a kettle of salted water to a boil. Cook pasta till al dente and drain well in a colander. In a bowl toss together pasta, parsley, garlic, onion, olives, capers, and salt and pepper to taste. Drizzle mix with lemon juice and extra virgin olive oil and toss. Add in tuna and toss to combine.
  2. Yield: 4 servings
