  • 1 onion, minced
  • 1 tbsp. vegetable oil
  • 2 (3 ounce.) uncooked hot or sweet Italian sausage, casings discarded
  • 1 (14 to 16 ounce.) can tomatoes, liquid removed and minced
  • 1 tbsp. tomato paste
  • 1/4 c. dry white wine
  • 1 garlic clove, chopped
  • 1/3 c. minced green pepper
  • 1/2 pound penne
  • 1/4 c. chopped parsley
  • Freshly grated Parmesan as an accompaniment

Directions

  1. Cook onion in oil till softened.
  2. Add in sausage, cook until no longer pink.
  3. Stir in tomatoes, paste, wine, garlic, salt and pepper.
  4. Bring to a boil and simmer stirring occasionally for 15 min.
  5. Stir in bell pepper and parsley and simmer for another 5 min.
  6. While sauce is simmering, cook penne in pot of boiling salted water for 10 min.
  7. Drain the penne, transfer to a bowl.
  8. Toss the penne with the sauce and serve it with the Parmesan.
