Ingredients

  • 1/4 c. lard
  • 1/4 c. flour
  • 1/4 c. Gebhardt chili pwdr
  • 1/2 tsp cumin pwdr
  • 1/2 tsp garlic pwdr
  •     Salt to taste
  • 1/4 Tbsp. Tabasco sauce
  • 3 c. water
  •     Over medium heat, heat the lard in a frying pan.

Directions

  1. In a bowl, mix together the flour, chili pwdr, cumin, garlic pwdr and salt. Slowly add in spice mix to the melted lard using a whisk. Add in Tabasco.
  2. Still using a whisk, slowly add in water. Simmer for about 90 min to reduce.
  3. (You may add in 1/2 tsp. cocoa, 2 to 4 chopped garlic cloves and 1 to 2 Tbsp. cilantro before adding water to vary this original recipe.)
  4. Sauce for 6 enchiladas
