Directions

  1. Place the cookies in a bowl, cover, and chill. Whisk the Large eggs in a mixing bowl till light and fluffy, 1 to 2 min. Whisk in the sugar, a little at a time, and continue to whisk till completedly blended, about 1 minute more. Pour in the cream and lowfat milk, whisking to blend. Add in the peppermint extract and blend in well. Transfer the mix to an ice cream maker and freeze, following the manufacturer's instructions. After the ice cream stiffens (about 2 min before it is done) add in the minced cookies and continue freezing till the ice cream is ready. Let stand to ripen and harden.
