Old Fashioned Tapioca With Lemon Sauce Recipe

Ingredients

  • 2 1/2 c. reduced-fat (2%) lowfat milk
  • 1/3 c. sugar
  • 1/4 c. quick-cooking tapioca
  • 2 tsp grated lemon peel
  • 1 tsp vanilla extract
  •     Lemon Sauce (see recipe)

Directions

  1. Whisk lowfat milk, sugar, tapioca and lemon peel in heavy medium saucepan to blend. Let stand 5 min. Stir over medium heat till mix thickens and boils, about 5 min. Remove from heat. Fold in vanilla. Cover and refrigeratetill cool, at least 4 hrs. (Can be prepared 1 day ahead. Keep refrigerated.)
  2. Spoon into small bowls. Spoon Lemon Sauce over and serve.
  3. This recipe yields 6 servings.
