Matzah Meal Pancakes (Chremslach) Recipe

Ingredients
- 2 x Large eggs
- 1 x Level tsp. salt
- 5 fl ounce (150 ml / 2/3 c.) hot water
- 3 ounce (75 g / 3/4 c.) fine matzah meal
- 1 x Level tbsp caster (superfine) sugar
- 1 tsp Grnd cinnamon
- 2 ounce (50 g / 1/4 c.) caster (superfine) sugar
Directions
- Eat warm off the pan.
- These are probably similar to the meal cakes which were offered as a sacrifice in the Temple at Jerusalem.
- Beat the Large eggs, salt and 2 Tbsp. of the water till thick. Gradually add in the meal and the sugar and sufficient additional water to make a thick batter which just drops from the spoon. Fry in oil 1/4 inch (0.5 cm) deep or possibly a mix of 2 ounce (50 g / 1/4 c.) butter and 1 Tbsp. oil till golden and puffy. Turn and cook the other side. Serve warm off the pan, plain or possibly with the mixed cinnamon and sugar.
