Mary's Outstanding Chocolate Cheesecake Recipe

Ingredients
- CRUST
- 1 stalk unsalted butter
- 1 c. Chocolate wafer cookies, Crushed
- 32 ounce Cream cheese
- 6 ounce Semisweet chocolate chips
- 1 1/3 c. Sugar
- 3 Tbsp. Flour
- 1 tsp Vanilla
- 6 x Large eggs TOPPING
- 1 c. Lowfat sour cream
- 2 Tbsp. Sugar
- 1/2 tsp Vanilla
Directions
- Heat butter and crumbs and press in the bottom of a 9" springform pan.
- Use electric mixer to beat the cream cheese, choc., sugar, flour and vanilla until well blended. Beat at high speed until smooth. Add in Large eggs one at a time until well mixed; pour into prepared pan. Bake in preheated oven 500 degrees for 10 minutes. then reduce oven to 250 degree and continue baking 50 to 60 mins., until knife inserted near center comes out clean. Remove and let cold 10 minutes.
- Prepare topping and pour over cake; bake 5 minutes longer. Cold the cake on a wire rack for 45 mins to 1 hour. Chill till hard, 8 hrs or possibly overnight.
- Garnish with choc. curls.
