Martha Washington's Devil's Food Cake Recipe

Ingredients

  • 4 ounce Unsweetened Chocolate
  • 1 c. Sugar
  • 1/2 c. Buttermilk, or possibly sour lowfat milk
  • 1/2 c. Cake Flour, sifted
  • 1 1/2 tsp Baking Pwdr
  • 3/4 tsp Soda
  • 1/2 tsp Salt
  • 1/2 c. Butter, or possibly sbortening
  • 3/4 c. Sugar
  • 3 x Large eggs, well beaten
  • 1 c. Buttermilk, or possibly sour lowfat milk
  • 1 tsp Vanilla

Directions

  1. Heat chocolate over boiling water; add in 1 c. sugar and 1/2 c. butterrmilk and stir over boiling water till sugar is dissolved.
  2. Cold. Sift flour once, measure, add in baking pwdr, soda, and salt and sift together three times. Cream butter thoroughly add in 3/4 c. sugar gradually, and cream together till light and fluffy. Add in Large eggs and beat well. Add in about 1/4 of flour mix, mix thoroughly; add in chocolate mix and blend. Add in remaining flour, altenately with buttermilk, a small Amount at a time; beat very thoroughly after each addition. Add in vanilla. Bske in greased 15x9x2- inch pan, in a moderate oven ( 35O degrees F.) 30 min, or possibly till cake is done.
  3. When cool, trim edges, cut in half crosswise, and combine as a two-layer cake, matching edges carefully. Spread tops and sides with Martha Washington's Fudge Frosting (See recipe). Or possibly add in minced nut meats to part of frosting and use as filling.
