Maple-Chai Pumpkin Muffins Recipe

Ingredients

  • Maple-Chai Pumpkin Muffins
  • based on Healthy Maple Pumpkin Muffins
  • 1¾ c. finely ground whole wheat flour*
  • 1 t. baking soda
  • ½ t. fine sea salt
  • 1 ½ t. homemade chai spice (See recipe below.)*
  • ⅓ c. melted coconut oil
  • ½ c. maple syrup
  • 2 farm fresh eggs, at room temperature
  • 1 c. pumpkin purée
  • ¼ c. 2 % milk
  • 1 t. pure vanilla extract
  • ⅓ c. plus 1 T. pepitas, divided*
  • Preheat oven to 325 F. Line muffin tins with muffin cups or spray with cooking spray. (I used one regular size muffin tin and one mini-muffin tin.)
  • 3 T. ground cardamom
  • 1 T. ground cinnamon
  • ½ t. ground cloves
  • ½ t. ground nutmeg
