M'qalli Chicken With Olives And Preserved Lemon (Yellow Sauce) Recipe

Ingredients

  • 2 x chickens
  • 3 x onions cut into slides
  • 3 x crushed cloves of garlic
  • 1 x coffee spoonful of ginger
  • 1 x little bit of saffron
  • 1 x soup spoonful of lemon juice salt
  • 1 x glass of water
  • 2 x preserved lemon cut into slides
  • 10 x preserved green olives

Directions

  1. Clean and drain the chicken, salt it, leave it for 2 hrs, then clean and drain it again. Cook it in a pressure cooker with onions, garlic, saffron, ginger, lemon juice, salt and water, mix and cover, then cook on a middle fire, until the chicken is almost cooked, add in lemon slides, olives and cook for 5 minute on a little fire. Present the chicken in complete, watered with sauce and decorated with olives and preserved lemon slides.
