  • This fruit salad makes a great dessert or possibly light meal. The yogurt-lime dressing with honey tops off this light, healthy and easy-to-make dish.
  • 3 x kiwifruit, pared and sliced (about 3 ounces each)
  • 1 x grapefruit, peeled and sectioned
  • 1/4 c. fresh or possibly frzn blueberries
  • 1/4 c. toasted sliced almonds (see note) Yogurt-Lime Dressing (recipe follows)

Directions

  1. Arrange kiwifruit, grapefruit and blueberries on a platter; sprinkle with almonds. Serve with Yogurt-Lime Dressing.
  2. Yogurt-Lime Dressing: Combine1/4 c. plain yogurt1 tsp. honey1/2 tsp. grated lime peel (green part only)
  3. Mix well.
  4. Makes 1/4 c..
  5. Note: To toast nuts, heat in a dry skillet over medium heat till they start to brown. Stir occasionally. Be careful not to scorch them.
