Jeffcoat's Cornbread Chicken Casserole Recipe

Ingredients
- 4 x chicken breasts, boneless & skinless
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 2 c. Stove Top cornbread stuffing mix
- 2 c. Pepperidge Farm herb stuffing mix
- 1 sm onion, minced
- 2 c. chicken broth
- 1 stk butter or possibly margarine
Directions
- Boil chicken for 20-30 min. Cut chicken into chunks. Combine 1 c. Pepperidge Farm Stuffing (herb-seasoned and cubed) and 1 c. stove-top cornbread stuffing, 1 stick of butter, and 1 c. of chicken broth. Combine soups, onion, and 1 c. of chicken broth. Grease a baking dish. Layer combined mixes (i.e., stuffing mix, chicken, 1/2 of soup mix; then repeat); leave stuffing on top. Bake at 350 degrees for 30-35 min.
