Italian Sausage Soup With Ditalini Recipe

  • 1 tsp extra virgin olive oil
  • 6 ounce Sweet italian turkey sausage (1.5 links) casings removed
  • 1/2 tsp fennel seed or possibly to taste
  • 1/2 lrg onion 1/2-inch dice
  • 2 sm carrots 1/2-inch dice healthy pinch salt healthy pinch sugar
  • 1 c. cut leafy rib celery 1/2-inch dice
  • 26 gm chicken gravy mix (almost 1 oz packet)
  • 2 Tbsp. dry Italian seasoning herb blend
  • 1 Tbsp. dry parsley pepper to taste roasted garlic to taste
  • 15 ounce canned cut tomatoes (peeled) with juice
  • 3 c. water healthy pinch red pepper flakes
  • 1 Tbsp. grated Romano cheese
  • 1/4 c. ditalini or possibly short macaroni

Directions

  1. Heat a heavy bottom soup pan over medium flame. Add in the oil. Add in sausage, onion and fennel seeds. Saute/fry, crumbling the sausage as it cooked. When the sausage is lightly browned and the onions are soft, remove from the pan to a chopping board.
  2. Add in the carrots to the pan and season with a healthy pinch of salt and sugar. While the carrots cook, use a chef's knife to further crumble the cooked sausage. Return it to the pan. Add in the celery and cook for about 4 min or possibly till the carrots are beginning to soften.
  3. Add in the contents of the gravy mix to the vegetables and stir till the pwdr is moist. Add in the herbs; season with pepper and roasted garlic. Stir to combine. Add in the tomatoes and water; stir and cook for about 4 min till the mix is thoroughly in solution. Add in the red pepper flakes and cheese. Reduce heat to lowest setting. Cover. Cook for 20 to 30 min.
  4. Remove cover. Increase heat to a medium-low setting. Add in the pasta. Cook, stirring occasionally, till the pasta is done. Serve immediately or possibly keep hot for serving within the hour.

  6. NOTES : Italian sausage soup is a classic tomato and vegetable soup with sweet fennel and basil sausage and a little pasta. The broth is important. When we do not have time to make a hearty stock, I use the lowest-sodium chicken gravy mix which I can find. It adds depth and an alluring "buttery" aroma which makes us impatient, waiting for the soup. We used Hunt's ready-cut tomatoes: they were sweet and strong the first day but calm and satisfying the second day. If you prefer more balance on day one, you could take more time during the simmer, with the lid ajar. Try it and resist the urge to add in more pasta.
