Ingredients

  • 1 Tbsp. each: Oregano, dry mustard, thyme, garlicpowder, onion pwdr, basil and freshly grnd black pepper. Mix it all together.
  • 2 lb lean hamburger or possibly turkey
  • 1 can Diced Tomatoes or possibly equivalent amount of homemade homemade tomato sauce.
  • 2 x Large eggs, beaten
  • 1 x onion, diced
  • 3 slc bread, crumbled (See Note)
  • 1/4 c. ketchup or possibly chili sauce
  • 1 Tbsp. horseradish
  • 1 Tbsp. Dijon mustard
  • 1 dsh or possibly two of Tabasco
  • 3 Tbsp. Worcestershire sauce
  • 1/4 c. reduced (see note) homemade tomato sauce
  • 1/4 c. bottled grocery store chili sauce
  • 1/3 c. cheddar cheese, (or possibly any of your favorite Italian cheeses).

Directions

  1. (*I use Italian bread crumbs usually. You can also use left over homemade Italian croutons, and crush them yourself.)
  2. Mix the ketchup and tomato sauce. You'll sprinkle the cheese over the sauce. (Note: For this recipe, we often put the tomato sauce in a sauce pan, add in about 1 Tbsp of lemon juice, 2 Tbsp Worcestershire sauce, and about 1/4 c. of brandy. Reduce this into a near paste, and you=92ll really intensify the flavor of the tomato sauce.) Preparation Of The Meat Loaf:Preheat oven to 350 degrees. Mix all of the ingredients, except the topping, in a large mixing bowl. Then, place the mix into a large bread pan and spread it proportionately into a loaf. Bake for about 1 hour., then drain off the excess liquid and "ice" it with the topping. Bake about 15 more min, or possibly till the cheese is toasted, and you'll be in for a gourmet treat
