%20And%20there%20wasn't%20a%20passel%20of%20people%20in%20my%20kitchen%20talking%20laughing%20and%20throwing%20peeled%20apple%20slices%20or%20raw%20pie%20dough%20down%20each%20other's%20shirts,%20because%20that's%20what%20we%20did%20back%20then%20for%20hilarity.%20But%20it%20was%20a%20crisp%20day,%20and%20I%20was%20thinking%20that%20pie%20dough%20is%20something%20easily%20made,%20but%20which%20most%20people%20are%20really%20afraid%20of%20making%20and%20maybe%20it'd%20be%20a%20good%20thing%20to%20post%20about.%3C/p%3E%3Cp%3EI%20sound%20blase%20in%20that%20previous%20paragraph,%20but%20the%20truth%20of%20the%20matter%20is%20that%20I%20really%20don't%20know%20what%20I'm%20doing%20when%20it%20comes%20to%20pie%20crust.%20In%20fact,%20it's%20been%20quite%20a%20while%20since%20I%20made%20pie%20crust,%20finding%20adequate,%20as%20I%20do,%20the%20red%20box%20of%20Pilsbury%20in%20my%20grocery%20refrigerator%20section.%3C/p%3E%3Cp%3EAnyway,%20I%20pulled%20up%20cooksillustrated.com%20because%20they%20make%20pie%20crust%20with%20vodka,%20and%20who%20doesn't%20love%20a%20little%20vodka%20in%20the%20middle%20of%20a%20saturday%20(even%20if%20you're%20not%20actually%20going%20to%20drink%20it%20for%20another%205%20hours.%20I%20was%20indoctrinated,%20at%20an%20early%20age,%20that%20you%20must%20wait%20until%205pm%20for%20any%20alcoholic%20beverage).%3C/p%3E%3Cp%3EHere's%20how%20the%20whole%20thing%20turned%20out:%3C/p%3E%3Cp%3EYeah,%20we%20ate%20half%20of%20it%20before%20I%20remembered%20to%20take%20a%20picture.%20Sue%20me.%3C/p%3E%3Cp%3EStill,%20the%20crust%20is%20not%20exactly%20the%20uniform%20golden%20brown%20it%20is%20supposed%20to%20be.%20And%20in%20fact,%20even%20though%20everyone%20else%20liked%20it,%20I%20found%20it%20to%20be%20a%20bit%20dry.%3C/p%3E%3Cp%3EWhich%20means%20I'll%20have%20to%20make%20it%20again,%20because%20now%20I'm%20obsessed%20with%20pie%20crust,%20and%20I%20must%20make%20pie%20until%20I%20get%20it%20right.%3C/p%3E%3Cp%3EDarn.%3C/p%3E%3Cp%3EIn%20any%20case,%20this%20is%20how%20I%20made%20the%20insides:%3C/p%3E%3Cp%3Epreheat%20oven%20to%20425%3C/p%3E%3Cp%3EI%20put%20all%20the%20ingredients%20in%20a%20large%20dutch%20oven%20and%20cooked%20them%20a%20little%20bit,%20stirring%20frequently,%20until%20the%20apples%20can%20be%20pierced%20easily%20with%20a%20fork,%20but%20not%20so%20cooked%20they%20fall%20apart.%20(Full%20disclosure:%20I%20got%20this%20idea%20from%20Cooks%20Illustrated%20as%20well%20because%20I%20like%20a%20piled%20high%20pie,%20but%20sometimes%20the%20apples%20in%20the%20center%20don't%20completely%20cook)%20Let%20apples%20cool%20in%20the%20pan.%20When%20they%20are%20coolish%20to%20the%20touch%20pour%20them,%20juices%20and%20all,%20into%20the%20pie%20crust%20and%20quickly%20cover%20with%20the%20top%20crust%20and%20pinch%20the%202%20crusts%20together%20in%20a%20nice%20way.%20(I%20almost%20always%20fail%20to%20do%20this%20--%20the%20darn%20thing%20never%20looks%20good).%20Brush%20the%20top%20of%20the%20pie%20with%20the%20egg%20and%20don't%20forget%20to%20make%20a%20few%20slivers%20in%20the%20top%20of%20your%20crust%20so%20steam%20can%20escape.%20I%20often%20forget%20this%20because%20I'm%20a%20spaz.%20Sprinkle%20the%20top%20of%20your%20pie%20with%20sanding%20sugar%20if%20you%20have%20it.%3C/p%3E%3Cp%3EBake%20at%20425%20for%2015%20min%20then%20lower%20to%20350%20and%20bake%20until%20your%20pie%20is%20that%20lovely%20golden%20color%20I%20dream%20about.%20Take%20it%20out%20and%20let%20it%20sit%20(if%20you%20can%20bear%20to%20do%20that)%20for%2030%20min%20to%20an%20hour.%20Or,%20just%20get%20a%20fork%20and%20dig%20in,%20burned%20tongue%20be%20damned.%3C/p%3E){kind=link}
