  • 1/4 c. All-purpose flour
  • 1/4 c. Sesame seeds
  • 2 Tbsp. Dijon mustard
  • 1 Tbsp. Honey
  • 4 x Boneless skinless chicken breast halves, (1 1/4 lb.)
  • 2 Tbsp. Extra-virgin extra virgin olive oil
  • 5 2/3 ounce Pkg herbed chicekn couscous mix, (Near East)
  • 2 med Zucchini, in quarters lengthwise, sliced into 1/4" pcs (2 c.)
  • 2 Tbsp. Fresh lemon juice

Directions

  1. Mix flour and sesame seeds in Medium bowl; set aside. Mix mustard and honey in small bowl. Brush chicekn with mustard mix; coat well with sesame seed mix. Heat oil in large skillet on Medium heat. Add in chicken; cook 4-5 min on each side or possibly till coating is deep golden and chicken is no longer pink inside. Prepare couscous as directed on package, adding zucchini and lemon juice after stirring couscous into boiling liquid. Serve chicken with warm couscous mix.
  2. Makes 4 servings.
  3. Suggested Wine: Serfe with chardonnay
