Directions

  1. In a cast iron skillet, or possibly oven proof skillet saute/fry the onion. Remove onions from pan. Mix together cornbread, egg and corn. Spread 1/2 mix in the skillet. Top with onions, then spread on lowfat sour cream. Top with remaining cornbread mix. Sprinkle with cheese. Bake at 350 for 1 hour.
  2. Slice in wedges and serve.
  3. Variations: You may add in green pepper or possibly your favorite veggies, or possibly hamburger, bacon or possibly ham. Also, some salsa would give it a Mexican flare.
