Directions

  1. In a large frying pan drizzle olive oil and heat the pan. Place the zucchini and the garlic. Cook until the zucchini is golden and the garlic is golden. Add the parsley and the anchovies and continue to sauté. Add the chick peas and continue to sauté another minute or two.
  2. Place in a serving dish and drizzle a little more olive oil on top and season with a dash of sea salt, black pepper and a little grated Romano cheese to taste. Serve over rice if desired or macaroni.
