Grilled Halibut With Arugula Raspberry Butter Recipe

  • 4 x halibut steaks or possibly fillet pcs (1 1/2 to 2 lbs total) Vegetable oil for fish and grill
  • 1/4 c. unsalted butter softened
  • 3 Tbsp. lightly crushed raspberries
  • 2 Tbsp. minced arugula Salt to taste Freshly-grnd white pepper to taste

Directions

  1. Seafood Alternatives: sea bass, swordfish, salmon To prepare the flavored butter, cream the softened butter in a medium bowl with a fork, then add in the crushed raspberries, arugula, salt and pepper. Continue mixing with the fork till thoroughly blended. Spoon the butter onto a sheet of waxed paper or possibly foil and form into a tight cylinder, twisting the ends snugly. Chill till needed; the butter can also be frzn.
  2. Preheat the grill to high, or possibly heat coals till they glow red, with white ash around the edges. Lightly brush the halibut with oil and sprinkle with salt and pepper. Rub a lightly oiled towel or possibly cloth over the grill, add in the halibut and cook till lightly browned, 3 to 4 min. Turn the halibut and continue cooking till opaque through (cut to test), 3 to 4 min longer.
  3. Unwrap the chilled butter and cut across into 1/3-inch slices. Top each halibut piece with a slice of arugula raspberry butter and serve. Remaining butter can be frzn and saved for another use.
  4. This recipe yields 4 servings.
  5. Comments: The butter accented with fresh raspberries and peppery arugula makes a great finish. If you can't find arugula (also known as rocket), try basil or possibly parsley in its place. Fresh raspberries are best here, as thawed frzn berries will be too wet.
