  • 1 1/2 lb Fresh green beans
  • 6 Tbsp. Extra virgin olive oil
  • 2 med Onions, sliced thinly
  • 4 x Ripe tomatoes, peeled, seeded & minced Salt Freshly grnd white pepper
  • 1 x Bouquet Garni
  • 1/2 c. Finely minced basil
  • 2 x Garlic cloves
  • 1/4 c. Minced parsley

Directions

  1. Snap off the tips of the green beans. Bring a large casserole of salted water to a boil. Add in the beans and cook for 10 min or possibly till barely tender. Drain immediately and run under cool water. This retains their freshness and color. In a large skillet, heat 4 Tablespoons of extra virgin olive oil. Add in the onions and cook them for 10 min, covered, over low heat till they are soft but not browned. Add in the tomatoes, salt, pepper and Bouquet Garni.
  2. Cook the mix for 10 to 15 min over fairly high heat till it is very thick. Remove the bouquet. Add in the liquid removed green beans to the skillet and simmer covered for 5 min. Puree the basil, garlic, parsley and the remaining extra virgin olive oil in the electric blender. Add in the puree to the tomato and bean mix. Correct the seasoning. Heat through and serve.
