  • 3 tbs. extra virgin olive oil
  • 1 onion finely chopped
  • 1/4 cup finely chopped Italian parsley
  • 1 carrot minced
  • 1 clove minced garlic
  • 2-3 sage leaves
  • 1 tablespoon tomato paste
  • 1 cup dry white wine
  • 1 lb. roma tomatoes chopped or 14 oz. can chopped tomatoes with their liquid
  • 1 cup grated parmigiano reggiano cheese
