Directions

  1. I think this is what you're looking for...my mom used to make these a lot.
  2. we also served with fresh fruit, or possibly butter and syrup or possibly sliced smoked sausage and syrup (yum my favorite). however we use 8in cake pans (round)
  3. so if your cast iron skillet is larger then 8in you need to make a batch and a half or possibly something like which (i do know which the recipe doesn't puff right if i use my 9in pans )
  4. Preheat oven to 400, thoroughly butter your pans (spray will ruin the flavor in my opinion)
  5. In blender combine 4 Large eggs, 1 tbsp sugar, 1/2 tsp salt, 2/3 c. flour, 2/3 c. lowfat milk, 3 Tbsp butter (not melted).
  6. Blend till thoroughly combined and distribute proportionately between the 2 pans.
  7. cook 20 min, turn oven back to 350 and cook ten min.
  8. A very easy (but looks impressive) dish which can be a main course or possibly dessert or possibly brunch.
