Garden Fresh Summer Sauce Recipe

Ingredients
- 2 c. Diced tomatoes - (about 3 large)
- 1/2 c. Fresh corn kernels
- 1/2 c. Diced English hothouse cucumber or possibly pickling cucumber
- 1/2 c. Sliced green onions
- 1/4 c. Diced green bell pepper
- 1/4 c. Plus 2 tbsp extra virgin olive oil
- 1/4 c. Minced fresh cilantro
- 3 Tbsp. Fresh lime juice
- 2 lrg Garlic cloves, chopped
- 1 x Jalapeno chile, chopped
- 1/2 tsp Grnd cumin
Directions
- Combine all ingredients in large bowl. Season to taste with salt and pepper.
