Game Hens Roasted On Herb And Dried Fruit Stuffing Recipe

Ingredients
- 6 x Cornish games hens - (abt 1 1/4 lbs ea) rinsed well, patted dry, and split in half lengthwise Extra virgin olive oil cooking spray as needed
- 3 Tbsp. unseasoned dry bread crumbs
- 2 Tbsp. minced parsley
- 2 lrg garlic cloves chopped
- 1 tsp crushed dry rosemary
- 1/4 tsp crushed dry thyme
- 2/3 c. no-sugar-added dry cherries minced (or possibly dry cranberries)
- 12 x dry apricot halves minced
- 8 x dry apples minced
- 1/3 c. dry currants
- 1 c. minced onion
- 2 med celery ribs with leaves minced
- 2 Tbsp. reduced-fat margarine melted
- 2 tsp crushed dry sage
- 1/2 tsp crushed dry thyme
- 3 c. fresh bread crumbs
- 1/2 c. dry white wine Up to 1/2 c. fat-free no-salt-added canned chicken broth Juice of 1 lemon Grated zest of 1 lemon
Directions
- Preheat oven to 350 degrees.
- Lightly coat game hen halves with cooking spray. Combine bread crumbs, parsley, garlic, rosemary, and thyme. Sprinkle over the hens.
- In a large bowl, combine fruits, onion, celery, melted margarine, and sage. Stir in bread crumbs. Moisten with wine and chicken broth to desired consistency. Transfer mix to a large oven-proof shallow casserole dish. Arrange seasoned game hen halves on top. Drizzle with lemon juice and top with lemon zest.
- Cover with aluminum foil and bake till hens are tender, about 40 min. Uncover and continue to bake till hens are nicely browned, another 5 - 10 min. Serve at once.
- This recipe yields 12 servings.
