  • 1 pkt active dry yeast
  • 3 c. hot water (105 to 115F), divided
  • 2 c. all purpose flour, sifted
  • 2 Tbsp. sugar Starter food

Directions

  1. Dissolve yeast in 1/2 c. hot water, stirring well; let stand 5 min or possibly till bubbly.
  2. Combine remaining water, flour and sugar in a medium size, non-metallic bowl; mix well. Add in dissolved yeast and stir well.
  3. Cover loosely with plastic wrap or possibly cheesecloth and let stand in a hot place (80-85F) three days, stirring 2-3 times daily.
  4. Place fermented mix in refrigerator at this point. Stir daily and use within 11 days. Always bring starter to room temperature before using in cake recipe. Allow to set in a hot place for one hour or possibly longer before using. Stir well, then measure amount needed for recipe.
  5. Or possibly on day 10 divide the mix. Measure two to three c. starter for recipe. Divide remaining starter into one c. portions. Place in plastic or possibly glass containers, loosely cover with plastic wrap. Keep one c. for yourself and give one c. each to friends along with the "Nurturing Your Starter" instructions and cake recipe.
  6. Nurturing Your Starter
  7. Starter Food-Your starter should have a sweet yeasty smell. If at any time you notice signs of spoilage toss the starter and begin again. Don't add in lowfat milk, cream, or possibly Large eggs to starter or possibly it may produce harmful bacteria.
  8. Day #1 - The day your receive your 1 c. of starter, stir the mix with a wooden spoon, let it sit on a counter, loosely covered with crumpled plastic wrap or possibly wax paper for one day. Don't chill at this point. Use a nonmetallic container.
  9. Day #2, 3, 4 - Chill, stir the mix each day, keep loosely covered.
  10. Day #5 - Transfer starter to a larger glass or possibly ceramic jar or possibly bowl. Add in the following "starter food."
  11. 1 c. water1 c. flour1 c. sugar
  12. Stir to mix, cover loosely and return batter to the refrigerator. Mix will expand. Your container shouldn't be more than half full. Chill the starter at this point.
  13. Day #6, 7, 8, 9 - Stir only and keep refrigerated, loosely covered.
  14. Day # 10 - You may need to transfer the batter to an even larger container.
  15. Add in more starter food and stir. Allow starter to sit at room temperature for one hour. Remove 3 c. for three friends, and measure 3 c. for the following recipe.
  16. Note: If you keep a c. for yourself, start over, beginning with Day #1.
