Directions

  1. Sift together the first 7 ingredients, the dry ingredients. Add in 1/2 cup shortening, 1/3 cup buttermilk and 1/2 cup coffee. Beat for 2 min at medium speed. Add in 1/3 cup buttermilk, 2 large eggs, 1 tsp vanilla and beat for 2 min more. Pour into 2 greased 8" layer cake pans. Bake at 350 degrees for 30 to 35 min. Frost cooled cake with Seven Minute Mocha Frosting:
  2. In double boiler, beat over rapidly boiling water 7 min or possibly till frosting holds its shape. Remove from boiling water and blend in 1 tsp vanilla. Frost cooled cake.
