Espresso Brownies with Ganache Recipe
Ingredients
- 1 1/2 sticks butter (3/4 cup)
- 2 c. sugar
- 1 c. flour
- slightly adapted from Tune Up Cafeâs Espresso Chocolate Brownies
- 1 c. of 60% cacoa Ghirardelli Chocolate chips (or other premium chocolate)
- 4 T. butter
- 1 pkg. Starbucks Via instant coffee
- 1/4 c. sugar
- 1/2 c. cold heavy cream
- 1 oz. Baileyâs

%20as%20I%20was%20still%20fixating%20on%20our%20Santa%20Fe%20trip%20(and%20wishing%20I%20were%20still%20there!)%20%20%20Sorry,%20%20you%20all%20thought%20I%20was%20beyond%20all%20that.%20%20I%20will%20get%20out%20of%20this%20melancholy%20post-vacation%20mood%20soon,%20I%20promise.%3C/p%3E%3Cp%3EAnother%20fine%20reason%20to%20make%20these%20brownies:%20%20%20I%20have%20been%20bombarding%20hubby%20with%20mostly%20vegetarian%20meals%20since%20we%20got%20back.%20%20(That%20too%20is%20probably%20Santa%20Fe%E2%80%99s%20fault.)%20%20%20%20Since%20I%20definitely%20wanted%20him%20to%20accompany%20me%20on%20any%20and%20all%20return%20visits%20to%20New%20Mexico,%20I%20thought%20he%20deserved%20a%20sweet%20treat%20for%20putting%20up%20with%20my%20%E2%80%9Cget-my-vegetarian-freak-on%E2%80%9D%20mode%20of%20late.%3C/p%3E%3Cp%3EHere%20is%20my%20version%20of%20Espresso%20Brownies%20with%20Ganache%20Topping.%3C/p%3E%3Cp%3EEspresso%20Brownies%3C/p%3E%3Cp%3ESlightly%20adapted%20from%20Baker%E2%80%99s%3C/p%3E%3Cp%3E4%20%20squares%20%20unsweetened%20baking%20chocolate%3C/p%3E%3Cp%3E1%201/2%20sticks%20butter%20(3/4%20cup)%3C/p%3E%3Cp%3E2%20c.%20sugar%3C/p%3E%3Cp%3E1%20pkg.%20Starbucks%20Via%20instant%20coffee%3C/p%3E%3Cp%3E1%20t.%20vanilla%3C/p%3E%3Cp%3E3%20farm%20fresh%20large%20eggs%3C/p%3E%3Cp%3E1%20c.%20flour%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%3C/p%3E%3Cp%3EI%20found%20my%20basic%20brownie%20recipe%20on%20the%20Baker's%20box.%20It%20is%20super%20easy%20and%20always%20turns%20out%20good.%3C/p%3E%3Cp%3EIn%20a%202%20quart%20glass%20measuring%20cup%20(or%20other%20microwavable%20mixing%20bowl),%20melt%20butter%20and%20chocolate.%20%20%20Make%20sure%20chocolate%20is%20completely%20melted.%20%20%20Stir%20in%20sugar,%20coffee,%20%20and%20vanilla.%20%20%20Add%20eggs%20one%20at%20a%20time,%20stirring%20well%20after%20each.%3C/p%3E%3Cp%3EAdd%20flour%20and%20stir%20well.%20%20%20%20%20Pour%20into%20a%20prepared%2013%E2%80%B3x9%E2%80%B3%20baking%20pan.%20%20%20Bake%2030-35%20minutes%20or%20until%20a%20toothpick%20inserted%20into%20center%20comes%20out%20with%20%E2%80%9Cfudgy%E2%80%9D%20crumbs.%20%20%20Be%20careful%20not%20to%20overbake.%20%20Cool%20in%20pan.%3C/p%3E%3Cp%3EJust%20chillin'...waitng%20for%20the%20ganache%20topping.%3C/p%3E%3Cp%3ERemove%20from%20oven%20and%20let%20cool%20while%20you%20make%20the%20ganache.%3C/p%3E%3Cp%3EEspresso%20Ganache%20with%20Coffee%20and%20Bailey%E2%80%99s%3C/p%3E%3Cp%3EMelt%20chocolate%20and%20butter%20in%20a%20sauce%20pan%20over%20low%20heat,%20stir%20in%20coffee%20and%20sugar.%20%20%20Whisk%20until%20sugar%20is%20melted.%20%20%20Once%20melted,%20let%20cool%20to%20room%20temperature.%3C/p%3E%3Cp%3EButter,%20chocolate%20chips,%20sugar%20and%20coffee%20mixture.%20Also%20just%20chillin'.%3C/p%3E%3Cp%3EPlace%20cooled%20chocolate%20in%20a%20stand%20mixture%20with%20whisk%20attachment.%20%20%20Whisk%20chocolate.%20%20%20Slowly%20add%20cream%20and%20Bailey%E2%80%99s.%20%20%20Continue%20to%20whisk%20until%20fluffy.%3C/p%3E%3Cp%3EWhip%20it---whip%20it%20good!%20(Little%20blast%20from%20the%20past!)%3C/p%3E%3Cp%3EPlace%20mixture%20back%20in%20sauce%20pan%20and%20heat%20over%20low%20heat%20while%20stirring%20constantly.%20%20%20When%20it%20becomes%20glossy%20and%20smooth,%20pour%20over%20cooled%20brownies.%20%20%20Cover%20with%20plastic%20wrap%20and%20refrigerate%20for%202%20hours%20before%20serving.%3C/p%3E%3Cp%3EThis%20is%20an%20odd%20way%20to%20make%20ganache,%20but%20I%20had%20to%20reheat%20the%20mixture%20after%20mixing.%20%20%20%20Maybe%20it%20was%20the%20Bailey%E2%80%99s%20I%20added?%20%20%20Who%20knows,%20but%20I%20am%20willing%20to%20make%20these%20luscious%20brownies%20again!%3C/p%3E%3Cp%3EThese%20are%20a%20fudgy,%20chewy%20brownie.%3C/p%3E%3Cp%3E(What%20hubby%20doesn%E2%80%99t%20eat%20is%20getting%20taken%20to%20the%20hospitality%20room.%20%20Man,%20these%20coaches%20are%20getting%20spoiled%20this%20week!)%3C/p%3E){kind=link}
