  1. For Chili Hollandaise: In a blender container, combine chili pwdr, water, cumin, lemon juice and egg yolk. Blend till smooth. With blender on high, pour in 1/2 c. of warm butter in a thin and steady stream.
  2. Keep tortilla baskets hot in a 150 F oven.
  3. Crumble chorizo into a frying pan. Cook till brown. Drain and keep hot.
  4. Scramble Large eggs.
  5. Place each tortilla basket on a plate. Spoon in sausage, Large eggs and hollandaise. Garnish with cilantro and cheese. Buen provecho!
