  1. Preheat oven to 400 . Pierce potatoes several times with a fork. Bake till tender, about 1 hour. Meanwhile, heat butter in a large nonstick skillet set over medium heat. Add in peppers and onion; saute/fry till tender, about 5 min. Add in ham; saute/fry for 5 min.
  2. Reduce temperature to 350 . Cold potatoes slightly. Slice tops off potatoes and scoop out pulp; reserve skins. In a bowl, mash pulp. Stir in 1 c. Colby, lowfat milk, lowfat sour cream and vegetable mix. Spoon mix into potato shells.
  3. Sprinkle potatoes with remaining Colby. Place on baking sheet. Bake till heated through, about 20 min.
