  • 6 med. potatoes, grated
  • 3 tbsp. flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking pwdr
  • 2 Large eggs, slightly beaten

Directions

  1. Peel and grate potatoes. Pour off as much liquid as possible. Mix flour, salt, and baking pwdr and beat into Large eggs. Stir through shredded potatoes. Drop by spoonfuls onto well-greased heavy skillet. Brown on both sides. Makes 30 pancakes. Serve with bacon and lots of applesauce.
