  • 1/4 c. Oil, olive Or possibly
  • 1/4 c. Oil, vegetable
  • 2 x Celery, stalks, minced
  • 1 med Carrot, minced
  • 1 c. Tomato, minced
  • 1 lrg Onion, chopped
  • 2 Tbsp. Parsley, chopped
  • 1 med Apple, diced
  • 2 x Bay leaves Pepper (to taste) Salt (to taste)
  • 2 Tbsp. Curry, pwdr, (or possibly to taste)
  • 3 c. Stock, fish
  • 1 Tbsp. Arrowroot
  • 1 Tbsp. Water
  • 1/2 c. Juice, pineapple
  • 1 lb Claws, snow crab

Directions

  1. Heat the oil in a skillet and add in 1/4 c. oil, celery, carrot, tomato, onion, parsley, and apple. Cook over moderately high heat, tossing continuously for 3 min.
  2. Add in bay leaves, salt, pepper and curry. Continue cooking for 4 min.
  3. Add in warm fish stock and bring to a boil. Reduce heat and simmer for 30 min.
  4. Add in dissolved arrowroot. Strain into another saucepan, then add in the claws and pineapple juice. Simmer for 3 min, correct seasoning with salt and pepper, and serve.
