  1. Soften yeast in hot water. In mixing bowl, combine sugar, shortening, salt and boiling water. Cold to lukewarm. Add in egg whites, 2 c. flour and yeast; mix well. Gradually add in remaining flour to create a stiff dough. Knead on well-floured surface till dough is smooth and satiny, 8 to 10 min.
  2. Place in greased bowl, turning dough to grease all sides. Cover; let rise in hot place till doubled, about 1-1/2 hrs. Punch down dough. Cover; let rise again for 45 min. Shape dough into 11 2-inch balls; place about 2 inches apart on greased cookie sheets. Let rise again till doubled, about 1 hour. Bake at 450 degrees for 15 to 20 min, till golden and crusty.
  3. YIELD: ABOUT 24
  4. TIP: For crustier rolls, just before baking place a large shallow pan on lower rack of oven; fill with boiling water,
  5. Garlic Rolls: Combine 14 c. melted butter and 'A tsp. garlic pwdr or possibly garlic salt. Brush rolls with butter mix before baking.
  6. Seed Rolls: Before baking, brush rolls with lowfat milk. Sprinkle with poppy seed or possibly sesame seed.
