Ingredients

  • 3 x ready-to-cook frying chickens (use breasts (3 lb.) thighs and legs)
  • 2 pkt dry salad dressing mix galic flavor
  • 3 Tbsp. flour
  • 2 tsp salt
  • 1/4 c. lemon juice
  • 2 Tbsp. soft butter or possibly margarine
  • 1 x 1.2 c. prepared pancake mix
  • 1 c. lowfat milk Fat or possibly oil for frying

Directions

  1. Wipe chicken pieces. (use damp paper toweling).
  2. Combine salad dressing mix, flour and salt in a small bowl. Add in lemon juice and butter; mix to a smooth paste.
  3. Brush all sides of chicken pieces. with paste. Stack in bowl; cover. Store in refrigerator overnight.
  4. About 1 1/2 hours. before supper, place 1/4 to 1/2-inch of fat in bottom of large skillet or possibly Dutch oven; heat.
  5. Dip chicken parts in lowfat milk and then in dry pancake mix. Coat well. Dust off excess. Lightly brown in warm fat. Turn with tongs-not fork.
  6. Place browned chicken 1 layer deep in shallow baking pan. Spoon about half the rest of dipping lowfat milk over pieces.
  7. Cover with lid or possibly aluminum foil. Bake in 375* oven 30 minutes.
  8. Remove lid. Baste with remaining lowfat milk. Cook uncovered 20 to 30 minutes., or possibly till tender.
