The%20author%20Rebecca%20Field%20Yager%20is%20no-nonsense,%20funny,%20and%20talented%20with%20her%20slow%20cooker.%20Of%20the%20three%20slow%20cooker%20books%20I%20checked%20out%20from%20the%20library%20this%20week,%20this%20one%20is%20actually%20getting%20read.%20NOT%20another%20boring%20crock%20pot%20cookbook,%20it's%20a%20fun%20read%20too.%3C/p%3E%3Cp%3EThis%20dinner%20came%20together%20with%20about%2030%20minutes%20of%20prep%20time.%20I%20did%20all%20of%20the%20prep%20work%20the%20night%20before,%20put%20everything%20into%20the%20crock%20pot%20liner,%20and%20then%20refrigerated%20it%20overnight.%20The%20next%20morning,%20all%20I%20needed%20to%20do%20was%20drop%20the%20liner%20back%20into%20heating%20element%20and%20set%20it%20to%20cook%20on%20LOW.%20I%20was%20away%20from%20home%20all%20morning,%20and%20when%20I%20returned%20in%20the%20afternoon,%20the%20delightful%20smell%20that%20hit%20me%20as%20I%20walked%20through%20the%20door%20reminded%20me%20that%20I%20didn't%20need%20to%20worry%20about%20starting%20dinner.%20It%20was%20already%20well%20on%20it's%20way...%3C/p%3E%3Cp%3ETo%20begin,%20place%204%20cubed%20potatoes%20and%203%20chopped%20tomatoes%20in%20your%20slow%20cooker.%3C/p%3E%3Cp%3EThe%20recipe%20called%20for%20a%20mixture%20of%20white%20and%20dark%20meat%20chicken%20pieces.%20I%20had%20a%20package%20of%20chicken%20leg%20quarters%20(legs%20and%20thighs),%20so%20I%20removed%20the%20skin%20to%20reduce%20the%20fat.%20Then%20I%20browned%20the%20chicken%20in%20a%20little%20oil%20over%20medium%20high%20heat%20until%20I%20got%20some%20color%20on%20both%20sides.%3C/p%3E%3Cp%3EPlace%20the%20chicken%20on%20top%20of%20the%20potatoes%20and%20tomatoes.%3C/p%3E%3Cp%3EOnce%20you%20remove%20the%20chicken%20from%20the%20skillet,%20toss%20in%20chopped%20onion%20and%20green%20pepper,%20garlic,%20brown%20sugar,%20ginger,%20pepper,%20cayenne,%20thyme,%20and%20salt.%20Cook%20for%203%20minutes.%3C/p%3E%3Cp%3EStir%20in%20some%20chicken%20broth.%3C/p%3E%3Cp%3ETransfer%20the%20mixture%20to%20the%20slow%20cooker.%20This%20is%20where%20I%20stopped%20and%20put%20mine%20in%20the%20fridge%20overnight,%20but%20if%20you're%20cooking%20it%20right%20away%20just%20cover%20and%20cook%20on%20HIGH%20for%203-4%20hours%20or%20LOW%20for%206-8%20hours.%3C/p%3E%3Cp%3EMine%20was%20just%20right%20after%206%20hours%20on%20the%20lowest%20setting.%20I%20unplugged%20my%20crock%20pot%20for%20a%20little%20over%20an%20hour%20because%20dinner%20was%20still%202%20hours%20away%20and%20I%20didn't%20want%20the%20chicken%20to%20overcook.%2045%20minutes%20before%20dinner,%20I%20plugged%20it%20back%20in%20and%20brought%20the%20contents%20back%20to%20a%20simmer.%20While%20this%20was%20happening%20I%20started%20a%20batch%20of%20rice%20on%20the%20stove%20top.%2030%20minutes%20before%20serving,%20I%20poured%20in%201%201/2%20cups%20of%20light%20coconut%20milk%20and%20stirred%20it%20around%20gently%20so%20as%20not%20to%20knock%20the%20super%20tender%20meat%20off%20of%20the%20bone.%3C/p%3E%3Cp%3EDelicious!%20Although,%20I%20have%20to%20admit,%20my%20kids%20wouldn't%20touch%20this.%20Not%20even%20just%20the%20chicken.%20I'm%20not%20sure%20why.%20Maybe%20because%20the%20oldest%20refused%20and%20the%20little%20one%20followed%20suit?%20Oh%20well,%20they%20had%20plain%20rice%20and%20broccoli%20with%20cheese%20for%20dinner.%3C/p%3E%3Cp%3EBut%20wait,%20I'm%20not%20finished!%20Today%20for%20lunch,%20I%20picked%20the%20chicken%20off%20of%20the%20bone%20and%20re-heated%20the%20leftovers.%20After%20a%20night%20of%20soaking%20in%20the%20ample%20sauce,%20the%20rice%20and%20chicken%20made%20for%20a%20lovely%20Caribbean%20chicken%20stew!%20I'm%20adding%20this%20recipe%20to%20my%20%22Favorites%22%20notebook.%20The%20kiddos%20can%20eat%20hotdogs.%20Their%20loss!%3C/p%3E%3Cp%3ECaribbean%20Chicken%20from%20How%20to%20Make%20Love%20&%20Dinner%20at%20the%20Same%20Time:%20200%20Slow%20Cooker%20Recipes%20to%20Heat%20Up%20the%20Bedroom%20Instead%20of%20the%20KitchenI%20adapted%20this%20by%20adding%20a%20little%20more%20salt%20and%20sugar%20and%20cayenne%20pepper.%3C/p%3E%3Cp%3EServes:%204%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EIn%20a%20skillet,%20brown%20the%20chicken%20in%20oil%20over%20medium-high%20heat.%3C/p%3E%3Cp%3EUsing%20a%20slotted%20spoon,%20transfer%20the%20chicken%20to%20the%20slow%20cooker,%20and%20add%20the%20potatoes%20and%20tomatoes%20to%20the%20slow%20cooker.%3C/p%3E%3Cp%3EAdd%20the%20onion,%20green%20pepper,%20garlic,%20brown%20sugar,%20ginger,%20pepper,%20cayenne,%20thyme%20and%20salt%20to%20the%20skillet%20and%20cook%20over%20medium-high%20heat%20for%203%20minutes.%3C/p%3E%3Cp%3EStir%20the%20broth%20into%20the%20skillet,%20then%20transfer%20the%20mixture%20to%20the%20slow%20cooker.%20Cook%20on%20low%20for%206%20to%208%20hours,%20or%20on%20high%20for%203%20to%204%20hours.%20Stir%20in%20the%20coconut%20milk%20and%20cook%20for%20an%20additional%2030%20minutes%20on%20low.%3C/p%3E%3Cp%3ENote:%20This%20is%20really%20good%20over%20rice%20for%20s
