  • 1 tbsp. butter
  • 1 tbsp. flour
  • 1/2 teaspoon salt
  • 1 c. lowfat milk
  • 1 1/2 c. cooked new potatoes, cut in half if lg.
  • 1 pt. fresh new peas, cooked and liquid removed

Directions

  1. Heat butter in medium saucepan; blend in flour and salt. Add in lowfat milk; stir and cook till thick and bubbly. Add in cooked potatoes and cooked peas to warm mix; heat through. Garnish with little minced pimento, if you like. Pour some butter over the top just before serving for a richer flavor.
  2. For creamed potatoes, just leave out the peas.
