Quinoa Pizza Casserole by Debra ParsonsI do not know who came up with this--I got it from and instructor at my health club who got it from a friend. Anyway, it's really good. My husband (who is about as far from being a vegetarian as you can get) thought it was excellent. We did it as a light entree with a slad on a Saturday night (even though it is really a side dish).… |

Mashed Potatoes by Candice GoodyearI don't like instant mashed potatoes at all. I make mine from scratch like many cooks out there. I like them either with butter and sour cream or butter and milk in them both are delicious. But, if you don't have milk or sour cream on hand you can substitute 1/4 cup real mayo, still taste great. |

Quinoa with Vegetables and Herbs by Nancy MiyasakiThis was easy and a delicious side for the yogurt chicken I made the other night. My sister raved about this and my husband, who normally prefers bulgur and other grains to quinoa, really enjoyed it. If you haven't had quinoa before, this is an easy and tasty dish to start with! Feel free to substitute other vegetables you have on… |

Pumpkin Macaroni and Cheese by CarolinaheartstringsHere’s a pumpkin side dish that you can serve at a holiday dinner. This recipe can be halved for a smaller family meal. Once again my non-pumpkin eating sweetie gave this a thumbs-up too! TIP: Add chopped ham or chicken and perhaps broccoli to make this a dinner casserole. |
