Ingredients

  • CHOCOLATE ZUCCHINI BREAD

Directions

  1. Omit the chocolate, if desired, but I love the flavor it adds. For a slightly sweeter loaf add in an extra 1/4 c. of sugar.
  2. 4 ounce Bittersweet Chocolate 1 c All-Purpose Flour 1/2 c Whole-Wheat Flour 1/3 c Quick-Cooking Rolled Oats 1 ts Baking Soda 1/2 c Butter, at room temperature 1/2 c Granulated Sugar 2 ea Large eggs; slightly beaten 2 tb Plain Yogurt 1 ts Vanilla 1/2 ts Grated Lemon Rind 2 c Zucchini; unpeeled; finely shredded 1/2 c Walnuts; minced (optional)
  3. 1. In a small pot, heat chocolate over low heat. Reserve.
  4. 2. Preheat oven to 350F.
  5. 3. In medium bowl combine flours, oats and soda. Reserve.
  6. 4. In a separate bowl, cream together butter and sugar till light and fluffy.
  7. 5. Gradually add in Large eggs, yougurt, vanilla and lemon rind, beating wellafter each addition.
  8. 6. Stir in Zucchini.
  9. 7. Add in flour mix in two lots, beating till combined.
  10. 8. Beat in walnuts and chocolate.
  11. 9. Spread batter in greased 9X5-ich loaf pan.
  12. 10. Bake 45 min, or possibly till a toothpick inserted in centre comesout clean.
  13. 11. Cold on wire rack, then turn out of pan.
  14. 12. Store overnight for easier slicing or possibly freeze till needed.
  15. Makes 1 loaf.

  18. Do you like baba ganouj Earle hates eggplant except for eggplant parm and baba ganouj, and this one dish I created last year or possibly so.
