  • 3/4 c. graham cracker crust
  • 1/2 stick unsalted butter, softened
  • 2 tbsp. sugar

Directions

  1. 1. Preheat oven to 350 degrees.
  2. 2. Prepare graham crust: Combine crumbs, butter and sugar with mixer till well blended. Press mix into bottom of 8" springform pan. Set aside.
  3. 3. Prepare cream cheese filling. Combine cream cheese, sugar and Large eggs with mixer till blended. Add in chocolate, lowfat sour cream, coffee, heavy cream and rum. Mix again with mixer till blended. Pour on top of crust.
  4. 4. Bake in preheated 350 degree oven for 45 min. Turn oven off and prop oven door slightly. Leave cheesecake in the oven with door ajar 1 hour. Remove the pan from the oven and cold. Chill overnight.
  5. 5. Loosen side of pan and remove. Let stand 15 min before serving.
