Chipotle Black Bean & Corn Soup Recipe

Ingredients

• 1 tsp. olive oil
• 1/2 large onion, diced
• 1/2 tsp. garlic powder
• 2 tsp. freshly ground cumin*
• 2 chipotle peppers from a can (in adobo), diced
• 1 can diced tomatoes
• 1 tsp. adobo sauce
• 2 cups chicken stock or vegetable broth
• 2 cans of black beans, rinsed/drained
• 1/2 cup corn (optional)
