Chilean Sea Bass And Oolong Tea Roulade Recipe

Ingredients

  • 1 lb Chilean sea bass fillet very fresh
  • 1 ounce loose oolong tea grnd fine in the blender Salt and fresh grnd pepper

Directions

  1. With a sharp knife slice the Chilean sea bass into a very thin sheet.
  2. Sprinkle the fish with the tea pwdr. Season with salt and pepper and roll up tightly. Wrap the rolls with plastic wrap then wrap again. Heat a steamer with water steam the rolls for about 12 min or possibly till they feel hard but the rolls don't have juice collecting under the plastic. Let the rolls sit and cold for 5 min then slice the fish at an angle and remove the plastic.
