%20JELL-O%20logo,%20and%20was%20available%20in%20two%20colors:%20Brown%20and%20Yellow%20(I%20hesitate%20to%20even%20call%20them%20flavors,%20but%20technically%20they%20were%20chocolate%20and%20vanilla).%20Even%20so%20I%20loved%20pudding.%20So%20much,%20that%20when%20JELL-O%20introduced%20its%20instant%20%E2%80%9Cjust%20add%20milk,%20stir%20and%20chill%E2%80%9D%20variety%20I%20was%20so%20enamored%20of%20the%20stuff%20that%20I%20would%20often%20spend%20my%20allowance%20clandestinely%20purchasing%20it%20by%20the%206-pack.%20In%20hindsight%20I%20realize%20my%20fascination%20with%20pudding%20wasn%E2%80%99t%20because%20I%20loved%20the%20taste%20(I%20don%E2%80%99t%20remember%20it%20having%20any%20taste).%20Rather%20it%20was%20the%20joy%20I%20found%20in%20the%20%E2%80%9Ccooking%E2%80%9D%20of%20the%20pudding%20(behind%20my%20mother%E2%80%99s%20back).%20Well,%20that%20and%20the%20texture.%3C/p%3E%3Cp%3ETo%20a%20kid%20the%20creamy,%20silky%20texture%20of%20pudding%20is%20nirvana.%20However,%20I%E2%80%99m%20no%20longer%20a%20kid.%20Of%20course%20instant%20pudding%20is%20no%20longer%20in%20my%20life.%20But%20I%E2%80%99ve%20also%20found%20a%20replacement%20for%20pudding%20in%20general%20in%20the%20form%20of%20Pots%20de%20Cr%C3%A8me.%20Specifically%20Chile-Chocolate%20Pots%20de%20Cr%C3%A8me.%3C/p%3E%3Cp%3EPots%20de%20Cr%C3%A8me%20is%20a%20creamier,%20smoother,%20silkier%20adult%20version%20of%20the%20pudding%20I%20loved%20as%20a%20kid.%20What%20makes%20it%20so%20superior%20is%20its%20grit-free,%20starchless%20texture.%20The%20texture%20comes%20from%20baking%20the%20custards%20in%20small%20ramekins%20partially%20submerged%20in%20warm%20water%20at%20a%20low%20temperature.%3C/p%3E%3Cp%3EChile-Chocolate%20Pots%20de%20Cr%C3%A8me%3C/p%3E%3Cp%3EWhich%20can%20be%20more%20difficult%20than%20it%20sounds.%3C/p%3E%3Cp%3EThe%20first%20time%20I%20attempted%20Pots%20de%20Cr%C3%A8me%20I%20filled%204%20ramekins%20with%20the%20silken%20liquid%20I%E2%80%99d%20carefully%20tempered%20with%20hot%20chocolate.%20I%20poured%20boiling%20water%20into%20a%20roasting%20pan%20as%20directed%20in%20the%20recipe.%20I%20then%20attempted%20to%20move%2015%20pounds%20of%20boiling%20water%20and%20its%20giant%20turkey%20roasting%20vessel%20into%20the%20oven.%20Naturally%20a%20tiny%20tsunami%20occurred.%20Slosh,%20bang,%20boom.%20The%20water%20splattered%20over%20the%20sides%20creating%20a%20blazing%20hot,%20slippery%20puddle%20on%20the%20floor.%3C/p%3E%3Cp%3EEvery%20way%20I%20approached%20the%20problem%20presented%20difficulties.%3C/p%3E%3Cp%3EOn%20the%20second%20attempt%20I%20added%20too%20much%20boiling%20water%20to%20the%20roasting%20pan.%20Once%20the%20steam%20cleared%20(and%20I%20determined%20that%20I%20had%20not%20scalded%20my%20face)%20I%20discovered%20my%20chocolate-filled%20ramekins%20were%20floating%20around%20in%20the%20water.%20I%20swear%20I%20filled%20the%20pan%20halfway%20as%20directed%20but,%20my%20Pots%20de%20Cr%C3%A8me%20had%20become%20a%20fleet%20that%20I%20dubbed%20the%20S.S.%20Pots%20de%20Cr%C3%A8me.%20Vessels%20indeed!%3C/p%3E%3Cp%3EDon%E2%80%99t%20let%20my%20adventures%20discourage%20you%20from%20trying%20this%20recipe%20for%20Chile-Chocolate%20Pots%20de%20Cr%C3%A8me.%20Since%20then,%20I%E2%80%99ve%20learned%20two%20important%20things:%3C/p%3E%3Cp%3EYou%20don%E2%80%99t%20need%20to%20use%20a%20roasting%20pan,%20save%20it%20for%20Thanksgiving.%20Choose%20a%20pan%20that%E2%80%99s%20just%20large%20enough%20to%20hold%20all%20your%20custard%20cups%20without%20touching.%20I%20used%20an%208-inch%20cake%20pan%20for%20these%20Chile-Chocolate%20Pots%20de%20Cr%C3%A8me.%3C/p%3E%3Cp%3EOh,%20don%E2%80%99t%20bother%20boiling%20the%20water;%20hot%20tap%20is%20works%20fine.%20Save%20the%20facial%20for%20another%20day.%3C/p%3E%3Cp%3EGREG%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EPour%20the%20cream%20into%20a%20small%20saucepan.%20Using%20the%20tip%20of%20a%20small%20knife,%20scrape%20the%20seeds%20of%20the%20halved%20vanilla%20bean%20into%20the%20cream.%20Add%20scraped%20vanilla%20bean%20half,%20arbol%20chiles,%20and%20cinnamon%20stick%20to%20the%20mixture.%20Set%20the%20pan%20over%20medium-low%20heat;%20warm%20the%20mixture%20until%20bubbles%20begin%20to%20form%20at%20the%20edge%20of%20the%20pan,%20but%20do%20not%20let%20it%20come%20to%20a%20boil.%20Remove%20from%20heat,%20cover%20and%20let%20infuse%20for%20at%20least%2040%20minutes.%3C/p%3E%3Cp%3ESet%20the%20oven%20rack%20in%20the%20center%20position%20and%20preheat%20the%20oven%20to%20275%20degrees%20F.%3C/p%3E%3Cp%3EMeanwhile,%20roughly%20chop%20the%20chocolate.%20Melt%20the%20chocolate%20and%20milk%20together%20in%20a%20small%20saucepan%20set%20over%20low%20heat.%20Remove%20from%20heat,%20whisk%20the%20mixture%20together;%20set%20aside%20to%20cool%20somewhat.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20beat%20the%20egg%20yolks%20and%20confectioners%20sugar.%20Add%20a%20big%20dollop%20of%20the%20cooled%20chocolate%20mixture%20and%20stir%20to%20combine.%20Add%20half%20of%20the%20cream%20mixture;%20stir%20to%20combine.%20Add%20the%20rest%20of%20the%20chocolate%20mixture%20and%20the%20rest%20of%20the%20cream%20mixture;%20stir%20to%20combine.%3C/p%3E%3Cp%3EPass%20the%20mixture%20through%20a%20fine%20mesh%20sieve%20into%20a%202-cup%20pitcher,%20you%20should%20have%20about%201%20%C2%BD-cups.%20Divide%20the%20mixture%20evenly%20between%20four%203%20to%204-ounce%20ramekins.%20Discard%20the%20solids%20in%20the%20sieve.%3C/p%3E%3Cp%3EPlace%20the%20ramekins%20in%20a%20small,%20shallow%20baking%20dish,%20just%20large%20enough%20to%20hold%20the%20ramekins%20without%20touching.%20Fill%20the%20dish%20with%20enough%20hot%20water%20to%20come%20halfway%20up%20the%20sides.%20Carefully%20move%20the%20dish%20to%20the%20heated%20oven.%20Bake%20until%20the%20top%20darkens,%20the%20bubbles%20set%20some,%20but%20the%20center%20still%20jiggles;%20about%2050%20minutes.%20remove%20the%20dish%20from%20the%20oven%20and%20allow%20the%20ramekins%20to%20cool%20in%20the%20water.%20Once%20they%20come%20to%20room%20temperature,%20cover%20and%20chill%20at%20least%204%20hours%20and%20up%20to%20overnight.%20Bring%20back%20to%20room%20temperature%20before%20serving.%3C/p%3E%3Cp%3ENotes%3C/p%3E%3Cp%3EYou%20may%20leave%20out%20the%20chile%20and%20cinnamon%20if%20you%20prefer%20plain%20chocolate.%20It%20will%20not%20affect%20the%20outcome.%3C/p%3E){kind=link}
